For dicing potatoes you need to select the correct type for the dish that you want to prepare - new potatoes are not suitable for roasting, however, they can be boiled whole or sliced before being added to stews and casseroles.

To peel or not to peel

Whether you're peeling the potatoes or not is entirely up to you. If you don't wish to peel them, then scrub and rinse them under cold water (this will stop them from going brown), before chopping off any large knobbly bits.

How to dice potatoes into cubes step by step

Firstly wash your potato under cold running water until it is thoroughly clean. Then peel with a vegetable peeler or a paring knife if desired.
