How to debone chicken thighs
1. Start by wiping the chopping board and chicken thighs dry with a kitchen paper towel. The poultry can be slippery when handled, patting it dry will help reduce this.
2. Remove the skin of the chicken thighs from the flesh by pulling the skin from the flesh. This is optional, only do this if you want boneless skinless chicken thighs.
3. Place the chicken thighs flesh side down on a chopping board, run the knife lengthwise along the bone on one side just enough to reveal the bone, do not cut all the way through into the flesh. Repeat the same on the other side to reveal the bone.
4. Slide the knife under the bone to separate the bone from the flesh
5. Lift the bone to one side (placing it at an angle) then scrape or cut the loose flesh from the bone. You can use kitchen scissors for this step if you prefer
