Equipment

  • chopping boards and a sharp knife

Ingredients

  • 1 lb brussels sprouts

Instructions

  • Remove the brussels sprout from the stalk if it has been done already. Transfer to a colander, rinse under cold water and pat dry.
  • Remove any loose, wilted, yellow, or spotty leaves from the brussels sprouts. Use a sharp knife to trim the stem about ΒΌ inch from the bottom of each brussels sprout and discard.

How to cut in halves or quarters

  • Hold the brussels sprouts one at a time in between your thumb and index finger and slice the Brussels sprouts in half vertically to get two halves.
  • To cut into quarters, simply cut each half into two lengthwise and you will have 4 altogether per sprout. That said, only cut the vegetables this way if you are using large ones.

How to slice and shred

  • Place each sprout on a chopping board and slice it widthwise into your desired thickness
  • To shred: you can shred this vegetable by slicing it thinly or with the help of a grater or food processor. If you're preparing sprouts by hand, halve each one and place it one at a time on the chopping board with the cut side facing down. Thinly slice them using a sharp knife.
