How to boil baby potatoes (Boiled Potatoes)

Ingredients
  

  • 2 lb baby potatoes
  • 50 g unsalted butter
  • 1 Tablespoon fresh parsley chopped
  • 1 Tablespoon fresh dill weed chopped
  • 1 Tablespoon fresh chives chopped
  • Salt and black pepper to taste

Instructions
 

  • Rinse and scrub the potatoes clean under cold running water.
  • Add the potatoes to a large pot and cover with water by about 1 inch, add salt and bring to a rapid boil for 5 minutes on medium-high heat, reduce the heat to medium heat then continue to boil for another 10 to 15 minutes or until the potatoes are fork-tender. It is good to start checking on the potatoes from 12 minutes depending on the size.
  • Drain the potatoes in a colander (cut them into halves if desired) and return them to the pot, add butter and chopped herbs. place it back on low heat and stir until the butter melted and the herbs are fragrant. Serve and enjoy!

Notes

How to store
Let it cool completely, transfer in an airtight container, and store in the fridge for up to 4 days, longer at your discretion.
Tip
If using dried herbs, use according to taste or reduce the measurement by half.
