Start by wiping the chopping board and chicken thighs dry with a kitchen paper towel.
Remove the skin of the chicken thighs from the flesh by pulling the skin from the flesh. This is optional, only do this if you want boneless skinless chicken thighs.
Place the chicken thighs flesh side down on the chopping board, run the knife lengthwise along the bone line on one side just enough to reveal the bone, do not cut all the way through into the flesh. Repeat the same on the other side to reveal the bone.
Slide the knife under the bone to separate the bone from the flesh
Lift the bone to one side (placing it at an angle on the choppinf board) then scrape or cut the loose flesh from the bone. You can use kitchen scissors for this step if you prefer
Trim off excess fat, skin, or gristle with kitchen scissors or a knife. Use the boneless chicken thighs fillets as desired.
How to store
It is best to use the chicken thighs immediately because of handling and safety, however, if that is not the case, you can store it in the fridge for up to 24 hours. Cooked chicken will keep in the fridge for up to 3 days in an airtight container.
Raw chicken thighs can be stored in the freezer for 6-9 months in a freezer-safe bag.
