How To Boil Potatoes In A Microwave

Ingredients
  

  • 2 large potatoes
  • salt to taste
  • water

Instructions
 

  • Wash and scrub the potatoes clean to get rid of dirt and pat them dry with a kitchen towel (this step is important especially if you would be peeling and dicing the potatoes)
  • Peel the potatoes with a vegetable peeler or a small pairing knife if desired. Place the spud one at a time on a chopping board and dice it into small cubes (this will also help it cook faster)
  • Transfer the diced potatoes into a bowl and rinse under cold water once to get rid of excess starch (do this process even if you are cooking a whole potato).
  • Add the rinsed potatoes to a microwavable bowl, add salt and water, just enough to cover the bottom of the bowl then place a lid on the bowl or cover with a plastic wrap.
  • Microwave the potatoes on high for 3 minutes, check for doneness with a fork or a knife. If it needs a little more time, stir it and continue to cook at 1-minute intervals until the potatoes are fork-tender.
  • Drain the water and serve the potatoes as desired. diced potatoes are great for potato salad, Enjoy!!

  • Freezer: store in an airtight container or freezer-safe bags, large potatoes should be wrapped individually for convenience. Freeze for up to 2 months or longer at your discretion.
